Her aunt shared the same interests as me and it was fun to share our thoughts on different topics. Also, she gave me two of her scobys so that I can start brewing kombucha on my own. I'm so happy to take this first batch to school because buying bottled kombucha in stores is too expensive! I'm also excited to experiment with flavors - green tea, white tea, oolong tea! This batch she gave me had both green and black tea, which are the standard tea flavors for starting a new batch.

So....why am I all hyped over a slimy, funky looking mushroom? SCOBY, which is an acronym for "symbiotic culture of bacteria and yeast," feeds on the sugar and caffeine which originally exist in your starting batch. However, after a couple of weeks of fermentation - you're left with a slightly sweet, and fizzy tea that makes hell of a refreshing drink. Some of the health benefits of kombucha come from its significant amount of antioxidants, glucuronic acid, glucon acid, lactic acid, B vitamins, amino acids, and TONS of probiotics. Those benefits include:
- Detoxification due to healthy bacterias and enzymes that reduce pancreatic and liver stress.
- Reduces risks of arthritis because it contains high levels of glucosamines, which are essential for healthy joints. Glucosamines encourages the production of hyaluronic acid, which helps to preserve cartilage structure and reduce pain from arthritis.
- Strengthening of the immune system due to the antioxidants that exist in the tea.
- Boosts of energy
- Boosts metabolism
I've been drinking apple cider vinegar which also has the similar properties as kombucha - I've experienced the last two benefits I've listed. I really cannot wait to drink my very own first batch of kombucha tea! I'm thinking coconut water lime or raspberry lemonade - what do ya think? :)
